If you're into the whole "social engineering" side of urban exploration, head to Dietrick Dining Hall. As long as you act like you belong, you can go anywhere and nobody will care. The people working the registers will even let you in for free if you say you're there to work (or you can just use the "employee's only" back door). My first time in there nobody questioned me until I'd been sitting behind a manager's desk for half an hour. And everyone there is too busy to call the cops anyways, so you're pretty much free to roam the building (just don't try stealing anything). However, unless you're into kitchens and dish rooms, there isn't much to see on the top two floors. 

In the basement though, there's an accessible crawlspace and a cool mechanical room. The crawlspace is pretty neat, and is accessible from several different places. Since Dietrick uses steam for cooking and cleaning, there's some serious heavy-duty stuff down in the mechanical room. And a door into the steam tunnels.

On the other end of the basement level is a large storage room (it used to be a dishroom). From here, access can be gained to two different sections of crawlspace, and a small tunnel network formerly used to bring dirty dishes down from the second floor dining room. The most interesting feature of the old dishroom has to be the two old freight elevators, that go up to the second floor.
